Crockpot Pineapple Ham
One of our favorite campsite recipe is actually cooked in a crock pot inside of our pop-up camper while we are sightseeing, biking or hiking trails. I travel with my husband, 5 children & 2 dogs, so I like to minimize my meal preparations while camping.
1 turkey ham loaf (These are available at your grocery store meat counter. Jenni-O is one brand name.)
1 can of pineapple chunks or crushed pineapple
1/2 cup of brown sugar
Double or triple this recipe as needed.
Cube the turkey ham loaf and put it in the crock pot. Sprinkle the brown sugar in. Pour in the pineapple and stir until mixed. Put the lid on, cook for 4-6 hours on low heat. Serve with rolls, instant potatoes and corn, and you have a quick easy meal. This will feed a family of 4 with leftovers depending on appetite. You can cut back on the pineapple and brown sugar to meet your own tastes.
The juices from this recipe are poured over dry dog food to make a treat the pooches love!
