Pork 'n Bean Chili
If you like pork and beans, you should try this chili. I make a large pot and freeze the rest so I will have a few quick things to pull out of the freezer. It is easily adapted to suit your tastes. It all fits in my large crockpot. This makes enough for 3-5 meals for my family of 5 so you may want to cut the recipe accordingly. It's really easy & fast to prepare.
1 7 lb can of pork and beans (on the bottom shelf at your grocery store)
1 lb of lean ground beef, cooked and drained (more optional)
2 large onions
Onion powder to suit. I use 2 tbsp. (My husband loves onions.)
2 oz of chili powder (I use the inexpensive spices)
Chopped tomatoes (optional)
Place in crockpot and let cook for 4-6 hours or until onions are tender. I sometimes saute my onions before adding them, if cooking time will be short. Serve with homemade cornbread, saltines or wheat crackers. Lots of fiber, low fat.
